It’s Day 3 of Cookbook Week and I’ve definietly saved the best for last! Express Lane Cooking by Shawn Sypus of the blog I Wash, You Dry isn’t about baking desserts, but about creating delicious, healthy meals with only 5 ingredients!
Express Lane Cooking is my newest cookbook and has quickly become my favorite! The family friendly recipes are simple, require little prep and are delicoius!
The fun part about Shawn’s book is that she offers three different ways to prepare the same 5 ingredients. This is great if you like to shop at bulk food stores where they sell massive packs of meat and veggies. You can buy a bulk amount of chicken and have three different ways to prepare it for the week. Genius!
My family has made two of the chicken recipes from the book so far, both from the same 5 ingredients. The first recipe I made was the Cheesy Potato Crusted Chicken. I’m a sucker for anything covered in potatoes… and bacon. This recipe was simple to make and the flavors were amazing and used chicken breast, bacon, red potatoes, cheese and broccoli. I would have never thought to layer my potatoes on top of my chicken so this was a fun, new way to eat the classic chicken & potatoes.

We also made Loaded Chicken Casserole using the same 5 ingredients… chicken breast, red potatoes, cheese, bacon and broccoli. I did take a picture of this casserole, but it wasn’t as pretty as the photo in Express Lane Cooking, so I’m not going to share that with you. HOWEVER, this was MY FAVORITE new recipe! I absolutely love big chunks of potatoes in my meal so this was right up my alley. My kids devoured it and asked for seconds. Shawn’s Loaded Chicken Casserol is a WINNER and will definitely make it into the rotation of meals we make for the family! I also, wanted to share with you a few of the other recipes from Express Lane Cooking that looked too good not to share!
With fall upon us, this Chili-stuffed Spaghetti Squash would make the perfect dinner for a chilly evening. The 5 ingredients to make this meal are spaghetti squash, vegie chili, bell peppers, onion and cheese. Easy peasy and delicoius! And for all you seafood lovers, Shawn has several recipes in Express Lane Cooking for you. I mean, can you go wrong with shrimp wrapped in panchetta? I think not!

Fried chicken is the absolute favorite. It may not be the healthiest, but they beg for it.

My family loves quesadillas or pizza! We could eat either of these every night!
Our family really enjoys dinner from our grill. Hamburgers or marinated chicken is probably tops. Homemade pizza is also another favorite.

Believe it or not, my family’s favorite is hot dogs…from the 90 yr old to the 21 year old! Everybody’s happy on hot dog night! Thank you!
When it’s hot like this week with triple-digit heat, a fruit plate with yogurt and cottage cheese dippings sounds refreshing. It’s just too hot to cook dinner sometimes but great for the diet!
Our favorite meal to have for dinner as a family would be halibut with chimichurri sauce. Sooo good.
Favorite meal is spaghetti and meatballs!!
Slow roasted brisket with homemade sauce, twice baked potatoes, green beans and cream cheese pound cake.
Macaroni & cheese with a salad
That’s a tough one… they can certainly eat some tasty cheeseburgers everyday if I made them. I’d say their two favorites are taco night and when I make pork chops with homemade spaetzle.

Love when both of my children and their fx are home and I can cook their fav. foods. That is a holiday to me !
I have 3 grandchildren that I bake cookies for on every holiday !
Meat loaf & Mac. N Cheese but lasagna & Italian chicken always goes over well.
