To finish off Snickerdoodle week, I’ve got a super yummy sandwich cookie for you. When I made the snickerdoodle cookies and I cupcakes, I had some extra cinnamon buttercream frosting and cookies. So I put them together and made what I call “Doodle Sammiches” aka Snickerdoodle & Buttercream Sandwich Cookies!
For the cookies, I used THIS recipe.
For the buttercream, I used THIS recipe.
To Assemble:
- Pipe a dollop of buttercream in the center of one cookie.
- Place a second cookie on top.
- Gently press cookies together until frosting reaches the edges of the cookie.
- Eat and enjoy!
