This year I’m hosing a HUGE July 4th Celebration at the Armed Forces Retirement Home in Washington, DC.   I’m expecting about 3000 people to attend to enjoy food vendors, music, entertainment, carnival games and fireworks!

I don’t have to cook or bake for the celebration, however that won’t stop me from making this super cute Patriotic Sugar Cookie Cake for my kids to enjoy in the days leading up to the 4th of July!

What I love most about this dessert is how incredibly quick and easy it is to put together and bake.

The ingredients are ones that I always have on hand in my pantry so I don’t have to run to the store to pick up supplies to make.

The second thing I love about this dessert is that it’s a one-bowl recipe.  Ingredients don’t need to be measured out into other bowls which means less mess, less clean up and easy baking!

My husband loves this recipe because of the white chocolate chips.  You could easily substitute milk or dark chocolate chips, however the patriotic sprinkles wouldn’t stand out as much as with white chocolate chips.  Making my husband love this recipe is a win in my book because he rarely likes dessert.

So what exactly is a cookie cake, you may be asking?  It’s a dessert that is made with a cookie batter base but baked in a cake tin.  It’s thick and rich like a cookie, but cuts like a cake into slices!

Frosting.  The frosting totes makes this dessert a cake too!  Lots and lots of sweet, creamy buttercream frosting decorating the top of this cookie transforms it into a decadent cake!

Patriotic Sugar Cookie Cake

Patriotic Sugar Cookie Cake

This simply delicious Patriotic Sugar Cookie Cake made white chocolate chips and red, white and blue sprinkles is the perfect Independence Day dessert!

Ingredients

  • 10 tbsp unsalted butter
  • ¾ cup granulated sugar
  • 1 egg
  • 1 tbsp vanilla extract
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ tsp cream of tartar
  • 2 cups flour
  • 1 cup white chocolate chips
  • ¼ cup red/white/blue sprinkles
  • 3 tbsp unsalted butter
  • 1 ½ cup powdered sugar
  • 1 tsp vanilla extract
  • 1/8 tsp salt
  • 2 tbsp heavy cream

Instructions

  1. Preheat oven to 350 degrees. Prepare a 9-inch spring form pan by spraying the bottom and sides with non-stick spray.
  2. Combine the butter and sugar in a medium bowl and mix until smooth. Add in the egg, vanilla, baking soda, salt and cream of tartar. Mix until well combined. Slowly add in the flour and mix until fully incorporated. Fold in the white chocolate chips.
  3. Pour the batter into your prepared spring form pan and press to the edges. Top with a few more white chocolate chips for presentation.
  4. Bake for 20-22 minutes, just until edges are a golden brown color. Remove from the oven and allow cooling for 15 minutes. Then, remove the spring form side and allow the cake to cool completely before frosting.
  5. With a stand mixer or a hand mixer, combine the butter and powdered sugar. Add in the salt, vanilla and heavy cream. Mix everything until it’s smooth and creamy.
  6. Scoop into a piping bag with a 1m tip and decorate your cake.
  7. Top with sprinkles before the icing sets.

Life has been so super duper chaotic lately.  If you’ve been following me on Instagram or Facebook you’ll see that I have been super quiet there.  These adorable lamb cookies make me happy and I really hope you love them too.

In early April, I was in a massive (for me) car accident where I was rear ended on the highway.  I had to bring my car to a quick stop because the cars in front of me were stopping.  The car behind me was still going full speed and plowed into the back of me.  The car behind that guy didn’t slow down or stop either so I got hit a second time.

The two impacts caused my body to be thrown back and forth in my seat and my head to hit the headrest repeatedly.  An ambulance came and took me to the local emergency room.

The doctors there ruled out a spinal cord injury but they did conclude I had a concussion.

Also,  my car was totaled… but that’s a story for another day.

For the weeks following the accident, I suffered through some of the hardest days of my life personally.  I’ve been able to handle a lot when it comes to my husband, kids and family… however when it came to dealing with my head injury, it was a lot harder to deal with.

Thus my blog, my work, my life needed to be put on pause then reset.

Fast forward a few more weeks and here I am.  Not back to 100%, I probably never will be, but back to a point where I can type, write, and begin to think about the future.

This recipe is not an original, but it is one that I think you’ll like.  You’ll be seeing more of these kinds of posts for the foreseeable future because I just need the time to heal.

Ingredients

  • 6 oz. white fondant
  • Black gel food coloring
  • ½ cup cornstarch, for rolling
  • 12 Oreo cookies
  • 2 cups white candy melts
  • 2 tsp coconut oil
  • 1 cup sweetened shredded coconut
  • 24 candy eyes
  • 12 Sprinkles (Circle-shaped – they will act as the lamb’s nose)

Instructions

  1. Line a baking sheet with wax paper.
  2. Begin by preparing your fondant shapes: add 3-4 drops of black gel food coloring to your fondant and fold and knead until completely colored. On a surface lightly dusted with cornstarch, roll out your fondant to be about ¼ of an inch thick and cut 12 small circles. These will be your lambs’ head.
  3. Shape smaller pieces of your dark grey fondant into tiny oval shapes. Make 24 of them: these will act as your lamb’s ears.
  4. Microwave your white candy in 30-second intervals until completely melted. With a fork, dip each Oreo into the candy and set on your lined baking sheet.
  5. Place one circle-shaped fondant in the center of each Oreo cookie. Sprinkle your shredded coconut on each one.
  6. Using a toothpick, apply a bit of white candy melts on the back of each fondant ear. Gently place on each Oreo cookie.
  7. Apply the candy melts on your candy eyes and your sprinkles. Apply on face of each lamb.
  8. Allow to set for at least 30-45 minutes.

Peanut Butter Oatmeal Cookies

When you want a treat but you don’t want to waste calories, you will definitely want to make these delicious Peanut Butter Oatmeal Cookies!

My New Year’s resolution was to make healthier life choices, but in small, manageable places.   The first new choice I made was to change my breakfast from sugar cereal topped with berries to a protein rich oatmeal topped with berries.

If you’ve never tried homemade oatmeal, consider my recipe for Overnight Oatmeal in a Jar.  It’s simple and so delicious!

What I love most about these Peanut Butter Oatmeal Cookies is that I don’t have to feel guilty when I want to enjoy one.  I thought hard about the recipe for these cookies and made sure to choose ingredients that would pack a punch!

Depending on what kind of peanut butter and oats you use, each cookie could potentially have 10g of protein in each one!

That’s a snack I can feel good about giving my kids and treating myself to!

Substitution Options

If you’re not into raisins and chocolate chips, consider substituting the following:

  • Chia seeds
  • Almonds
  • Walnuts
  • Peanuts
  • Sunflower seeds
  • Poppy seeds
  • Pumpkin seeds
  • Dried cranberries

You could also substitute agave or maple syrup for the honey.  Super easy substitution to make!

Peanut Butter Oatmeal Cookies

Yield: 1 dozen
Prep Time: 1 days 1 hour
Cook Time: 13 minutes
Total Time: 1 days 1 hour 13 minutes

Ingredients

  • 2 large bananas , mashed
  • 1/2 cup creamy peanut butter (I used all-natural Jif)
  • 2 large eggs
  • 2 Tbsp pure honey
  • 1 1/2 tsp pure vanilla extract
  • 1/2 tsp ground cinnamon
  • 1 tsp baking soda
  • 3/4 cup oat flour (pulse 3/4 cup oats in the food processor to make this flour)
  • 1/4 cup steel cut oats
  • 1/2 cup raisins
  • 1/4 cup dark chocolate chips

Instructions

  • In a large bowl, whisk together the mashed bananas, peanut butter, eggs, honey,  and vanilla until combined.
  • Add the oat flour and baking soda and fold together until no more flour can be seen.
  • Pour in the steel cut oats, raisins and chocolate chips and fold together.
  • Cover with plastic wrap and chill overnight.
  • When ready to bake, preheat oven to 375F & line baking sheet with parchment paper.
  • Using an ice cream scoop with a 1/4 cup serving,  scoop chilled dough and place evently onto parchment paper leaving 2-3 inches between each mound. Gently press down with a spatula to form a disk.
  • Bake 12-14 minutes or until the tops and sides are firm and a toothpick comes out clean.
  • Cool on the baking sheet for 10 minutes before removing to wire rack.
  • Store in an airtight container for up to a week.

Prep Time: 45 minutes
Cook Time: 12 minutes
Total Time: 57 minutes

Ingredients

  • 2 cups unsalted butter, cold and cubed
  • 1 cup packed light brown sugar
  • 1 tsp salt
  • 4½ cups Bob's Red Mill All-Purpose Flour
  • nonpareiles
  • melted chocolate

Instructions

  1. Preheat oven to 325F degrees. Line baking sheets with parchment paper.
  2. In the bowl of a stand mixer fitted with the paddle attachment, cream together cold butter and brown sugar.
  3. Add the salt and 3½ cups of the flour and mix on medium-low speed until combined.
  4. Replace paddle attachment with the dough hook. Sprinkle ½ cup flour and turn the mixer on low-medium. Allow the hook to knead dough adding as much of the remaining ½ cup flour as needed to make the dough soft, pliable, and similar to play-dough, not sticky.
  5. Divide dough into three sections and pat into a disc. Wrap tightly with plastic wrap and chill for 30 minutes or until slightly firm enough to roll out.
  6. On a floured surface, roll disc of dough out to about 1/4 inch thickness. Using a cookie cutter, cut out the dough and place each cookie inch apart on the prepared baking sheet.
  7. If decorating with sprinkles, pour sprinkles into a bowl and press the side of each cookie into the sprinkles and then place on the baking sheet.
  8. Using a fork, poke holes in the top of each cookie.
  9. Bake 12-20 minutes, or until edges are golden brown. The bake time will depend on the size of your cookie cutter. Smaller shapes 1in-2in will need 12-15 minutes - while larger shapes will need up to 20 minutes.
  10. Repeat with the remaining dough, working in batches so dough stays chilled and workable.
  11. Cool completely on wire rack before serving.
  12. Store cookies in an air tight container at room temperature.

The last two years have been pretty rough on my wife.  Because of my combat PTSD and everything that comes with it, my wife has had to endure some things that no wife should ever have to deal with.   The effects of war reached far beyond me to my wife and children.  However, Betsy did deal with it.  She stood by me… every day.

The weekend I made these cookies, I had decided I wanted to spend some time with Betsy.  Really spend time with her.   So, I decided that we should get into the kitchen and bake!

I started with a package of MEGA stuffed Oreos and my wife’s recipe for perfect chocolate chip cookies.  In the chocolate chip cookie recipe, we replaced the chocolate chips with crushed Oreo cookie pieces.

Oreo Cookie Dough Sandwich Cookies

Oreo Cookie Dough Sandwich Cookies

Yield: 12 sandwich cookies
Prep Time: 9 hours
Cook Time: 11 minutes
Total Time: 9 hours 11 minutes

Ingredients

Cookies

  • 2¼ cups flour
  • 1 tsp baking soda
  • ½ tsp salt
  • ¾ cup dark brown sugar, packed
  • ½ cup sugar
  • 12 Tbsp unsalted butter, melted
  • 1 egg + 1 egg yolk, large
  • 1 Tbsp vanilla
  • 1- 1½ cups chunked Oreo cookie pieces (not the filling, just the cookie part)

Filling

  • All the creme filling from the cookies of 1 package of MEGA stuffed Oreo cookies
  • 1/2 cup unsalted butter, room temperature
  • 1 tsp vanilla
  • 1 tsp heavy cream
  • 1 cup powdered sugar

Instructions

Cookies

  1. In a large bowl, sift together the flour, baking soda, and salt.
  2. In a medium bowl, whisk together the sugars until no more clumps remain. Add the butter and continue whisking until smooth.
  3. Add the eggs and vanilla and whisk until incorporated.
  4. Make a well in the flour mixture and pour in the wet ingredients. Mix with a wooden spoon until just combined.
  5. Add the Oreo cookie pieces and gently mix until combined.
  6. Cover with plastic wrap and refrigerate for at least 8 hours or overnight.
  7. When you're ready to bake, preheat oven to 325 F degrees and line cookie sheets with parchment paper.
  8. Using a cookie scoop, portion out 24 equal balls of dough. Form each dough into a thick disk and place 1in apart on the baking sheet.
  9. Bake 11-13 minutes or until the tops are a light golden color. DO NOT OVERBAKE. Remove immediately.
  10. Allow cookies to cool on the pan for 2-3 minutes before removing to a wire rack to cool completely.

Filling

  1. Cream together the Oreo cream cookie filling and the butter until smooth.
  2. Add the vanilla, powdered sugar, and heavy cream and whip on high for 1 minute.

Assembly

  1. Fill a piping bag fitted with a medium-small round tip with the cream filling.
  2. Pipe a generous amount of filling onto the bottom of one cookie until completely covered.
  3. Gently press a second cookie, flat side down, onto the the cream filling.
  4. Eat and enjoy!

After moving back to the USA, I was the most excited to have access again to as many sprinkles, sugar crystals and decorating supplies as I could get my hands on!   One of the first things I purchased were peach and teal sugar crystals from a local cake supply store.  As soon as I saw them on the shelf I was inspired to create something based on them!

Originally, I thought I would make a blossom type cookie with a Hershey’s Kiss in the center standing tall.  But once I started putting these cookies together I realized that the Kiss I chose was so soft in the center that it melted into a pool of chocolate creating a thumbprint instead of a blossom.

The longer these cookies stayed warm the more melty the Hershey’s Valentine’s Kisses in Chocolate Truffle got! Once the cookies and the Kisses cooled the centers were firm but soft enough to bite through.

The combination of soft cookie, crunchy sugar outside and smooth chocolate center truly make these Sugar Cookie Chocolate Thumbprints one of my most favorite cookies!

  • 1 tsp baking powder
  • 1 tsp salt
  • pink & blue sugar crystals
  • 1 bag Hershey's Valentine's Kisses in Chocolate Truffle
  • OXO Good Grips Medium Cookie Scoop

Instructions

  1. In the bowl of your stand mixer, cream the butter and shortening together until smooth. Scrape the sides of the bowl.
  2. Add the sugar and beat on high until incorporated.
  3. One at a time, add the eggs and beat well after each addition. Mix on high for 1 minute until pale yellow and fluffy.
  4. Mix in the vanilla.
  5. In another bowl, whisk together the flour, baking powder and salt.
  6. Add this mixture to the butter and sugar and mix until just combined.
  7. Cover with plastic and refrigerate 2 hours or over night.
  8. When ready to bake, preheat oven to 400 F degrees and line a cookie sheet with parchment paper.
  9. Using the OXO scoop, scoop out a level ball of dough. Form a ball in your hand then gently press it flat. This dough does not spread very much, so you want to create the size and shape of cookie you want with this process.
  10. Roll the disc in pink or blue sugar crystals until covered then place it on the parchment lined baking sheet.
  11. Bake for 7-8 minutes or until the bottom edges begin to brown. Do not overbake!
  12. IMMEDIATELY press a chocolate truffle into the center of each kiss while they are still on the baking sheet and hot. You'll need the heat from the sheet and the pan to melt the truffle into a delicious pool of chocolate. Allow the cookies to cool for 10 minutes before removing to a wire rack to cool completely.
  13. Allow the chocolate to set completely before storing or stacking in an air tight bakery box for storage.
