JavaCupcake Note: This is the second post in the “Ask the Baker” series featuring interviews with bakers and bakery owners!   Click here to see the complete list of bakers being interviewed.  Check back every Tuesday for a new interview!

Please introduce yourself. Tell us a little bit about what you do in the cupcake world and how/when you got started.

Hi, I’m Mari Luangrath and I own Foiled Cupcakes in Chicago. We’re Chicago’s only exclusively online personal delivery cupcake service. Our website launched in July 2009, and we service the entire Chicago and west suburb area.

Here’s a picture of me and my best friend, Jocelyn, who’s our Executive Cupcakeologist, based in Southern California.

How much time did you spend planning before you decided to take the steps to make your bakery a reality?

Starting this business was a labor of love that took a good year before we even thought to launch our site. Everything from branding, cupcake flavors, recipe testing, and ingredient sourcing are all things that we put a lot of deliberate time and effort into.

How much is made from scratch and how much is purchased pre-made?

We make everything from scratch, as far as our cupcakes and fillings go. All of our toppings are imported from Europe.

What inspires you the most? Love of cupcakes or love of making things people enjoy?

Bringing the community together. There’s no better way to do that than with food. And no better food to do that than with cupcakes. (That’s just our humble opinion.)

How can you be around all that yummy and not eat it all up?

When you’re surrounded by cupcakes all day long, it’s not hard to want something like empanadas. Or chicken parmesan. Or a box of salt.
