In my family, the most fun we have is when Grandpa comes to visit and over the years we’ve done some really fun things! I’ve put together a collection our favorite 5 Fun Things to do with Grandparents! Time with Grandparents is so special especially if you don’t live particualrly close to them. For example, they may have moved into one of the best villages for retired people to live in.

Grandpa told Matty to invite a few of his friends over for a trip to the park and Nestlé® Drumstick® S’mores! This was a simple but super fun way for Grandpa to be involved with Matty and his friends.

Grandpa set up a cute little table with a jug of juice and boxes of Nestlé® Drumstick® S’mores! He handed out the delicious treats to the kids and saved his favorite for himself, Toasted Marshmallow with Fudge!

2. Go to the Park

The park was the perfect setting for Grandpa to share Nestlé® Drumstick® S’mores with the kids. Matty and his friends got to run around, play and not worry about staying clean while they played at the park!

3. Play Cards

When I was a kid, my dad and I used to stay up late and play cards. When Grandpa comes to visit, he loves playing cards with my kids now. Whether it’s Go Fish, Memory or Rummy, playing cards is fun for all ages! Even better, in between turns you can eat Nestlé® Drumstick® S’mores!

4. Go to the Library

Many local libraries have story time once or twice a week for younger kids. This is a perfect activity for Grandparents to take their kids to because it doesn’t cost anything and kids love books! Check out a few books and take them to the park to read while you eat your Nestlé® Drumstick® S’mores!

5. Go for a Walk

One of my Dads favorite things to do is go for walks. He goes down to the local waterfront, to parks, and even around his neighborhood for a daily stroll. Bringing his grandkids along with him is always fun! And sometimes they watch youtube videos on the way. Not only do they get exercise, but they get a chance to talk and spend quality time together while enjoying the outdoors. A walk would be fun too with Nestlé® Drumstick® S’mores!

With my big move from Germany to the USA, I’ve found that I have less time and energy for big, extensive baking projects.  So this year, I’m focusing on simple, yet still delicious recipes & projects to share with you.  Thus, the Peeps White Chocolate S’mores were born!

These s’mores are so simple to make.  You start out with a ton of peeps, white chocolate, graham crackers and a clean baking sheet.  Preheat your oven to 350F degrees.

Line  the baking sheet with halved graham crackers.

Since white chocolate bunnies are everywhere this year, I decided that instead of spending a ton of money on bars of white chocolate, I purchased an Easter bunny and cut it up into pieces.  I’m all about spending less money on desserts!

Simply, chop the bunny up into tiny chunks and shards and evenly distribute it onto the graham crackers.

In a 350F preheated oven, pop the white chocolate and graham crackers into the oven for one minute.  You want to get the chocolate soft and a bit melty.

Press another graham cracker onto the top of each soft Peep and press until the Peep oozes out the side and is short enough to fit in your mouth.

With so many new Peeps flavors, it was hard to choose which was my favorite.  I used Vanilla Delight, Party Cake, Raspberry Delight,  Strawberry Delight and Classic.  Hands down my favorite was the Raspberry Delight with Vanilla being a close second.

Peeps White Chocolate S'mores

Cook Time: 4 minutes
Total Time: 4 minutes

Ingredients

  • Honey graham crackers
  • Peeps
  • White chocolate
  • Baking sheet

Instructions

  1. Preheat oven to 350F degrees.
  2. Break the graham crackers in half and lay them evenly on a baking sheet.
  3. Place white chocolate on top of each graham cracker.
  4. Bake for 1 minute.
  5. Place Peeps on top of the white chocolate. Bake for an additional 3 minutes or until the Peeps are soft and the tops just begin to brown. Remove from the oven to a wire rack.
  6. Press a graham cracker onto each Peep and press until the Peep oozes out the side.
  7. Eat immediately!

Alright now…let’s talk cookies. They’re kinda my thang. I’ve been referred to as the cookie queen on more than one occasion…just sayin’. Ha, but seriously they’re my favorite and I do sort of think of them as my specialty. Which is why I’m always wary of buying cookies because they so rarely live up to my expectations, especially now that I live in OH-which has admittedly fewer quality bakery options than NY did. BUT there is one place I’ve found that has solid cookies…Insomnia. They’re a national cookie chain that has shops located on/near college campuses and they deliver until all hours of the morning. I do not live on a college campus BUT I do live 15 minutes away from Kent, a college town (Kent State University…where my husband is getting his master’s and almost everyone I know went for undergrad)-and they have an Insomnia Cookies, and I have had the pleasure of stopping in and enjoying said cookies on more than one occasion.

Although Insomnia has a few different kinds of tasty looking cookies, I am always drawn to their Deluxe S’mores Cookie—it’s just something I can’t get anywhere else. And I LOVE IT! They’re the kind of smart bakery that serves your cookies warm, as they should be. And the cookie is chocolatey and chewy and has gooey mini marshmallows and little bites of crunchy graham crackers…and I live too far away to have them on the regular. So-I decided to make my own!

Ahhh I was nervous! I tried scouring the internet for their recipe or copycat recipes and nothing was right! I needed a fairly flat, definitely large, yet chewy and gooey and very chocolatey cookie base-I knew as long as I had that I could just add mini marshmallows and graham crackers and that would be simple enough to figure out. So I searched. And I found something I thought might work. And then I adapted it slightly (baking it for less time so they’re softer and chewier, in addition to adding the ‘mallows and grahams). And I reveled in my success….I HAVE DONE IT! I recreated the cookies (…pretty close anyway. As close as I think is possible without the actual recipe) and they are delicious. I’m so excited. And I’m so excited to share them with YOU GUYS!

My brother (who is currently in basic training for the Air Force) shares my love of the s’mores cookies and I know he’d love these. Which is why I’m freezing some to bring to him when I go to his graduation, and why I plan on making and shipping him a batch once he’s out of basic. Because I’m a good sister 🙂 But for reals…these cookies are so decadent and rich and perfectly chewy and they have gorgeously melted chunks of chocolate (I prefer dark but feel free to use milk!) and little bits of graham cracker and then-GUYS-some of the mini marshmallows toast while they bake. So the s’mores-ness is on the next level. They’re everything I wanted them to be and more and I know you’ll all love them as much as I do!

Chocolate S'mores Cookies

Chocolate S'mores Cookies

Yield: 18+ Cookies
Cook Time: 12 minutes
Total Time: 12 minutes

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 8 oz. milk or dark chocolate, 4 oz. coarsely chopped, 4 oz. cut into 1/4-inch chunks
  • 1 stick (8 tbsp.) unsalted butter
  • 1 and 1/2 cups granulated sugar
  • 2 eggs
  • 1 tsp. vanilla extract
  • 1 cup mini marshmallows, divided
  • 4 graham cracker squares, broken into small pieces, divided

Instructions

  1. Preheat oven to 325F degrees. Line a large baking sheet with parchment paper.
  2. Whisk together flour, cocoa powder, baking soda, and salt in a medium bowl.
  3. Melt chopped chocolate with the butter in a small heatproof bowl set over a pan of simmering water. Remove the bowl from heat and let cool a few minutes. Add sugar, eggs, and vanilla to the chocolate mixture and, using an electric mixer, beat on medium speed until combined.
  4. Slowly mix in the dry ingredients on low speed.
  5. Fold in chocolate chunks, 1/2 cup mini marshmallows, and 2 squares of broken up graham crackers.
  6. Scoop batter using a large cookie scoop (about 1/4 cup of dough) and place at least 2 inches apart on the prepared baking sheet. Press the remaining mini marshmallows and broken up graham cracker bits into the tops of each cookie dough ball (approx. 2 marshmallows and 2 graham cracker pieces per cookie).
  7. Bake until cookies are slightly only-del replaceWithoutSep" id="165" data-gr-id="165">flattened, about 12 minutes. Let cool on the sheet for at least 5 minutes before transferring to a wire rack to finish cooling.

It’s been almost two years since my neighbor (and now best friend!) Chasity enjoyed my cupcakes for the first time.  Two summers ago, she had an end-of-the summer BBQ in her back yard and we roasted marshmallows for s’mores.  It had been forever since I had s’mores and it inspired me to make cupcakes…  S’mores Cupcakes!

I brought those cupcakes to Chasity and they instantly became her favorite!  She still talks about them to this day!!  So, when it was time for Chasity to leave Germany and move back to the USA, she requested I make them again for her!

This time though, I wanted to make them a little fancier.  The first round were delicious, but they weren’t as “pretty” as I like to make my cupcakes.  I love a gorgeous swirl of frosting on top of the cupcake and I love using liners from Sweets & Treats Boutique.  So, that’s exactly what I did with these cupcakes. I just think they turned out absolutely beautiful!  Well… as beautiful as a cupcake can be!! hehe

Instead of having a graham cracker crust and a cracker on top, I decided to fill the cupcake with the same mixture that I’d use if I were making a graham cracker crust.  I packed that filling in tight so when you took a bite, the filling would be firm like a pie crust.

The frosting is a marshmallow frosting and a s’mores cupcake wouldn’t be complete with a Hershey’s chocolate!  So, I topped each cupcake with a chunk of that delicious Hershey’s milk chocolate and a dusting of graham cracker.

Perfect!  And… Chasity loved them! 🙂

One of the hardest parts of military life is saying goodbye to those friends you’ve become so close with.  So close, they’re family.  Chasity… I love you and I am so thankful for the friendship we shared!  I couldn’t have had a better neighbor, friend and now sister! <3  Good luck to you in the USA and you will be missed every day!

S’mores Cupcakes

S’mores Cupcakes

Yield: 12 cupcakes
Prep Time: 20 minutes
Cook Time: 18 minutes
Total Time: 38 minutes

Ingredients

Chocolate Cupcake

  • 1/2 cup unsalted butter
  • 3/4 cup brewed coffee
  • 1/2 Tbsp espresso powder
  • 1 tsp vanilla
  • 1/4 cup + 2 Tbsp cup dark chocolate cocoa powder
  • 1/3 cup sour cream
  • 1 egg
  • 1 cup sugar
  • 1 cup flour
  • 3/4 tsp baking soda
  • 1/2 tsp salt

Graham Cracker Filling

  • 3/4 cups graham cracker crumbs
  • 2 Tbsp unsalted butter, melted
  • 2 tsp sugar

Marshmallow Frosting

  • 1 7oz jar marshmallow fluff/creme
  • 1 cup unsalted butter, room temperature
  • 1 tsp vanilla
  • 3 cups powdered sugar
  • pinch of salt
  • 1-2 Tbsp heavy cream/milk

Garnish

  • 1 bar Hershey's chocolate
  • Reserved graham cracker crumbs

Instructions

Chocolate Cupcakes

  1. Preheat oven to 350 F degrees. Line cupcake pan with liners.
  2. In a medium sauce pan, melt the butter. Add the coffee, espresso powder, cocoa powder, and vanilla and whisk until combined. Set aside to cool slightly.
  3. In a large bowl, sift together the sugar, flour, baking soda and salt. Set aside.
  4. In a medium bowl, whisk together the sour cream and the eggs. SLOWLY add a few tablespoons of the chocolate mixture to the sour cream and eggs. Whisk to combine. In a slow stream, whisk in the remaining chocolate mixture until combined completely.
  5. Make a well in the center of the flour mixture and pour in wet. Using a whisk, stir until no more lumps remain.
  6. Fill cupcake liners 3/4 full. Bake for 18 minutes or until a toothpick comes out clean.
  7. Cool in pan for 5 minutes before removing to a wire rack to cool completely.

Graham Cracker Filling

  1. In a small bowl, combine graham cracker crumbs, butter and sugar. Mix together until completely incorporated.
  2. Reserve 1/4 cup for garnish.

Marshmallow Frosting

  1. Cream together the butter and marshmallow fluff.
  2. Add the sugar, vanilla and salt and mix on high until combined.
  3. Add enough cream until you get your desired consistency.
  4. Beat on high for 5 minutes or until light and fluffy.

Assembly & Garnish

  1. Using an apple corer, remove the center of each cupcake.
  2. Fill each cupcake with the graham cracker filling. Pack the filling tightly into each cupcake by pressing down and adding more until the filling reaches the top.
  3. Using a Wilton 1M tip fitted on a piping bag, pipe swirls of frosting onto each cupcake.
  4. Place 1/2 a square of chocolate onto the top of the frosting.
  5. Sprinkle reserved graham cracker filling onto the frosting.
  6. Keep stored in an air tight container up to a week.

I’ve had the idea to make chocolate graham crackers for several weeks now, but the timing to make them never seemed perfect.  I wanted to make them on a day where I could take the bake chocolate graham crackers into the back yard, roast marshmallows, and make s’mores! But, the weather has been yuckie and I was a little busy welcoming home my soldier from Afghanistan!

Finally, we’ve got a 4-day weekend, the weather is perfect and my husband decided to break out the firepit and picked up some wood from the store.  The perfect conditions for s’mores in the back yard.

These Homemade Chocolate Graham Crackers made the most amazing base for our s’mores.  The dough came together incredibly easy in the mixer and baked up so crisp.

The sweet taste of the honey comes through in these crackers just enough to add the perfect amount of sweetness to compliment the dark chocolate flavor.

Unfortunately, I don’t own a square cookie cutter.  So, instead I used a spring themed flower shaped cutter.  Which worked out pretty well actually.  Any shape cookie cutter could be used as long as it didn’t have any pointy edges, like a star does.  You want the crackers to bake evenly without any of the tips burning.  Soft edges are best.

To build these s’mores we simple roasted marshmallows over the hot coals of our fire until they were golden brown.  Then added a chunk of Lindt dark chocolate to one of the chocolate graham crackers, put the hot marshmallow and another cracker on top and smushed it all together.

Oooooooooh yes.

So gooey.  So delicious.  So good.

I think this summer, I’ll make regular honey graham crackers and homemade marshmallows and use super fancy dark chocolate to make s’mores.   Gourmet s’mores!  Yum! I can’t wait for that!

Homemade Chocolate Graham Crackers

Homemade Chocolate Graham Crackers

Yield: 3+ dozen crackers
Prep Time: 1 hour 15 minutes
Cook Time: 15 minutes
Total Time: 1 hour 30 minutes

Ingredients

  • 1 1/4 cup all-purpose flour
  • 1/2 cup dark chocolate cocoa powder
  • 1 cup powdered sugar sugar
  • 1/4 cup light brown sugar, lightly packed
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, cold & cubed
  • 2 Tbsp honey
  • 1/4 cup heavy cream, very cold

Instructions

  1. Line 3 cookie sheets with parchment paper.
  2. In the bowl of your stand mixer fitted with the paddle attachment, combine on low speed the flour, sugars, cocoa powder, baking powder and salt. Use a rubber spatula to scrape the sides and bottom of the bowl to ensure everything is incorporated thoroughly and that no lumps are visible.
  3. Add the cubed cold butter and continue mixing on low speed until the butter has broken down into very small pieces.
  4. In a small bowl, mix together the honey and cold heavy cream. Add this to the mixing bowl and mix on low speed until a dough ball forms. If you dough is too dry and does not come together after 2-3 minute of mixing, add 1 additional Tbsp of cream.
  5. Separate the dough into two balls and place one on a lightly floured surface. Roll dough to about 1/16in thickness.
  6. Using a cookie cutter, cut 2-3 inch shapes out of the dough and place on prepared baking sheet. You could use a square, circle, rectangle or a flower shape.
  7. Use a fork to poke holes into the top of each cracker.
  8. Repeat until all the dough has been used. Chill on baking sheets for about an hour in the refrigerator.
  9. Preheat oven to 350 F degrees.
  10. Bake each sheet for about 15 minutes.
  11. Cool on the pan for 1 minute before removing to a wire rack to cool completely.
  12. Use these graham crackers to make s'mores, dip in chocolate or eat as a snack!
  13. Store in an air tight container or a ziplock bag for up to a week.

S’mores Cupcakes

Last weekend my neighbors had us over for one big BBQ before school started.  Toward the end of the evening, the fire pit was lit and the marshmallows were brought out.  It was S’more time!!!

I couldn’t tell you the last time I had a s’more.  It had probably been years, to be honest.  At first, I wasn’t going to eat one… I was just going to let the kids enjoy it and watch.  But, then my wonderful husband roasted the perfect marshmallow.  You know… golden on the outside, soft and gooey on the middle… perfect.  And, I wanted it.  So, I made him give it to me… smushed next to a hunk of Hershey’s chocolate inbetween two graham crackers.

First bite.  Heaven.  Why don’t we make these more often?  I ended up eating two whole s’mores.  Yeah.  I know, why did I stop at two? haha But… all this s’more goodness got me to thinking about making a s’mores cupcake.  One last tribute to the summer, the neighborhood bbq’s and the amazing deliciousness that is graham cracker, chocolate and marshmallow.

So… this cupcake was born.  The “End of Summer S’mores Cupcake.”  It’s simple in it’s ingredients.  Graham cracker crust, my favorite chocolate cake topped with toasted marshmallow frosting and garnished with a chunk of graham cracker and chocolate… but the flavor is all s’mores!! YUM!

Before the summer is over… make these for your family or neighborhood friends.  One last tribute to summer and all it’s fun!

S’mores Cupcakes

S’mores Cupcakes

Yield: 12 cupcakes
Prep Time: 20 minutes
Cook Time: 18 minutes

Ingredients

Chocolate Cupcake

  • 1/2 cup unsalted butter
  • 3/4 cup brewed coffee
  • 1/2 Tbsp espresso powder
  • 1 tsp vanilla
  • 1/4 cup + 2 Tbsp cup dark chocolate cocoa powder
  • 1/3 cup sour cream
  • 1 egg
  • 1 cup sugar
  • 1 cup flour
  • 3/4 tsp baking soda
  • 1/2 tsp salt

Graham Cracker Filling

  • 3/4 cups graham cracker crumbs
  • 2 Tbsp unsalted butter, melted
  • 2 tsp sugar

Marshmallow Frosting

  • 1 7oz jar marshmallow fluff/creme
  • 1 cup unsalted butter, room temperature
  • 1 tsp vanilla
  • 3 cups powdered sugar
  • pinch of salt
  • 1-2 Tbsp heavy cream/milk

Garnish

  • 1 bar Hershey's chocolate
  • Reserved graham cracker crumbs

Instructions

Chocolate Cupcakes

  1. Preheat oven to 350 F degrees. Line cupcake pan with liners.
  2. In a medium sauce pan, melt the butter. Add the coffee, espresso powder, cocoa powder, and vanilla and whisk until combined. Set aside to cool slightly.
  3. In a large bowl, sift together the sugar, flour, baking soda and salt. Set aside.
  4. In a medium bowl, whisk together the sour cream and the eggs. SLOWLY add a few tablespoons of the chocolate mixture to the sour cream and eggs. Whisk to combine. In a slow stream, whisk in the remaining chocolate mixture until combined completely.
  5. Make a well in the center of the flour mixture and pour in wet. Using a whisk, stir until no more lumps remain.
  6. Fill cupcake liners 3/4 full. Bake for 18 minutes or until a toothpick comes out clean.
  7. Cool in pan for 5 minutes before removing to a wire rack to cool completely.

Graham Cracker Filling

  1. In a small bowl, combine graham cracker crumbs, butter and sugar. Mix together until completely incorporated.
  2. Reserve 1/4 cup for garnish.

Marshmallow Frosting

  1. Cream together the butter and marshmallow fluff.
  2. Add the sugar, vanilla and salt and mix on high until combined.
  3. Add enough cream until you get your desired consistency.
  4. Beat on high for 5 minutes or until light and fluffy.

Assembly & Garnish

  1. Using an apple corer, remove the center of each cupcake.
  2. Fill each cupcake with the graham cracker filling. Pack the filling tightly into each cupcake by pressing down and adding more until the filling reaches the top.
  3. Using a Wilton 1M tip fitted on a piping bag, pipe swirls of frosting onto each cupcake.
  4. Place 1/2 a square of chocolate onto the top of the frosting.
  5. Sprinkle reserved graham cracker filling onto the frosting.
  6. Keep stored in an air tight container up to a week.
