Creamy vanilla pudding layered with shortbread cookies and bananas paired with Malibu and Jameson make this Boozy Banana Pudding the perfect grown-up treat!

I’ve never made homemade Boozy Banana Pudding before.  To be honest, I did not really think it was a thing that people did because all I knew was those little pudding mix boxes from the baking aisle at the grocery store.

When I thought about making banana pudding from scratch, I reached out to my friends on social media and asked them what made their favorite banana pudding so amazing.  

Every person answered that the pudding had to be made from scratch and contain at least rum.

So that’s what I did.  I made a Boozy Banana Pudding from scratch featuring Malibu, an original coconut rum from the Caribbean, where the spirit of summer shines all year round, and Jameson,  a blend of pot still and grain whiskey from Ireland that is triple distilled; and remarkably smooth.

Making the pudding for this Boozy Banana Pudding isn’t a difficult undertaking.  In a sturdy medium size pot, combine sugar, corn starch, salt and egg yolks.

Whisk all those ingredients together until you get what looks like a clumpy mess.  No worries, though, because it will loosen up as soon as you add the milk.

Pour in the milk and whisk together over medium heat until the sugar and eggs dissolve and the mixture is smooth.

You’ll want to pay very close attention to this next part.  I made the mistake of stepping away and burnt the pudding.  You don’t want that.  Learn from my mistake and DO NOT STEP AWAY for the next 5-7 minutes!

Whisk, whisk, whisk your little heart out until the mixture comes to a simmer and begins to thicken.  As soon as the pudding begins to thicken up (it happens quick and you’ll have mere seconds before it burns) remove it from the heat and whisk until thick.

You’ll whisk all of that together while the pudding is still warm.  Transfer the entire mixture to a large glass bowl. 

Make sure to scrape down the pot to ensure every last drop of pudding gets in the bowl!

Finally, press a piece of plastic wrap over the pudding so that a film does not form on top while chilling.  Place bowl in the refrigerator for at least 4 hours so that the flavors have time to form and the pudding sets. 

When you’re ready to serve the boozy banana pudding, get 4 mason jars, shortbread cookies, bananas, and make the Jameson whipped cream.

I liked using shortbread cookies for this Boozy Banana Pudding because they seemed to hold up a lot better than the traditional vanilla cookies that are normally used. 

There is a lot of moisture sitting on top of the pudding and under the bananas and having a cookie that is not only delicious but will stand up to that is essential in creating the perfect Boozy Banana Pudding.

Assembling these desserts is quick and easy.  Simply layer pudding, cookies, bananas three times.  Add a dollop of Jameson whipped cream to the top, sprinkle cinnamon and garnish with a cookie and banana.

Serve the Boozy Banana Pudding immediately.  You can store them overnight if you have extra, but the cookies will get a bit soggy the next day.  

My husband enjoyed his delicious dessert with a glass of Jameson on the rocks and said it was the perfect night cap for his long day.

Yield: 8 dozen
Prep Time: 45 minutes
Cook Time: 12 minutes
Total Time: 57 minutes

Ingredients

  • 2 cups unsalted butter, cold and cubed
  • 1 cup packed light brown sugar
  • 1 tsp salt
  • 4½ cups Bob's Red Mill All-Purpose Flour
  • nonpareiles
  • melted chocolate

Instructions

  1. Preheat oven to 325F degrees. Line baking sheets with parchment paper.
  2. In the bowl of a stand mixer fitted with the paddle attachment, cream together cold butter and brown sugar.
  3. Add the salt and 3½ cups of the flour and mix on medium-low speed until combined.
  4. Replace paddle attachment with the dough hook. Sprinkle ½ cup flour and turn the mixer on low-medium. Allow the hook to knead dough adding as much of the remaining ½ cup flour as needed to make the dough soft, pliable, and similar to play-dough, not sticky.
  5. Divide dough into three sections and pat into a disc. Wrap tightly with plastic wrap and chill for 30 minutes or until slightly firm enough to roll out.
  6. On a floured surface, roll disc of dough out to about 1/4 inch thickness. Using a cookie cutter, cut out the dough and place each cookie inch apart on the prepared baking sheet.
  7. If decorating with sprinkles, pour sprinkles into a bowl and press the side of each cookie into the sprinkles and then place on the baking sheet.
  8. Using a fork, poke holes in the top of each cookie.
  9. Bake 12-20 minutes, or until edges are golden brown. The bake time will depend on the size of your cookie cutter. Smaller shapes 1in-2in will need 12-15 minutes - while larger shapes will need up to 20 minutes.
  10. Repeat with the remaining dough, working in batches so dough stays chilled and workable.
  11. Cool completely on wire rack before serving.
  12. Store cookies in an air tight container at room temperature.

It’s Girl Scout cookie season here in Germany – yes, be jealous… we get cookies a month before you do in the USA!  Anyhoo… my hubby has been complaining that the lemon cookies this year (Savannah Smiles) aren’t the traditional lemon cookie sandwiches he used to love as a kid.  So today when I realized I had two lemons in my fridge that I forgot to use last week, I knew today would be the perfect opportunity to whip up some lemon cookies that would satisfy his craving!

Dave wanted a cream filling inside the sandwiches, but I wanted to fill them with a berry preserve and top with a lemon glaze.  I said screw it… I’ll do both.  You can find the recipe for the berry filled cookies here.

PS… These cookies are so easy to make… you have no excuse not to make them… ASAP!

Creamy Lemon Shortbread Sandwich Cookies

Yield: 12-15 sandwich cookies

Ingredients

Lemon Shortbread

  • 1 cup unsalted butter, room temperature and soft
  • 1 lemon, zested and juiced
  • 1/2 cup sugar
  • 2 1/2 cups sifted flour - measure after sifting

Lemon Cream Filling

  • 2oz cream cheese, room temperature and soft
  • zest of 1 lemon
  • 2 tsp fresh squeezed lemon juice
  • 3/4 cup powdered sugar

Lemon Drizzle

  • 1 heaping cup powdered sugar
  • 2 tsp fresh squeezed lemon juice

Instructions

Lemon Shortbread

  1. Preheat oven to 325 F degrees. Line 2 cookie sheets with parchment paper.
  2. In the bowl of your mixer, press the lemon zest into the sugar. Your sugar will become thick and fragrant.
  3. Add the butter to the sugar and cream until fluffy. Scrape the sides of the bowl to make sure all the butter is incorporated.
  4. Mix in 1 Tbsp of the fresh squeezed lemon juice.
  5. Add the flour and mix on low until a dough ball forms.
  6. Place dough on a lightly floured counter and knead 2-3 times until smooth.
  7. Roll dough out about 1/4-1/2 inch thick.
  8. Using a 2 1/4in biscuit cutter (I used one from a Martha Stewart set), cut cookies and place onto prepared cookie sheet.
  9. Bake on center rack in your oven for 12-13 minutes or just until the edges begin to brown. Remove immediately to a wire rack to cool completely.

Lemon Cream Filling

  1. In a medium bowl, mix together the lemon zest and the cream cheese with a hand mixer.
  2. Add the lemon juice and mix until incorporated.
  3. Slowly add the powdered sugar and mix until no more lumps appear and the mixture is smooth.

Lemon Drizzle

  1. In a small bowl, combine the lemon juice and sugar.
  2. With a fork, stir until smooth and no lumps remain.

Assembly

  1. Spread the lemon cream in a thick layer on the bottom side of one cookie almost to the edges.
  2. Place another cookie on top of the cream filling (bottom side of the cookie face down on the filling) and press gently until the filling reaches the edges.
  3. Drizzle lemon and sugar mixture over the top of each cookie.

Lemon Raspberry Shortbread Sandwich Cookies.  Yea.  You read that correctly.  These cookies are the perfect combination of lemon and raspberries.  Sweet and tart.  I’ve made lots of lemon and raspberry combos (Lemoncino Raspberry Cupcakes & Lemon Raspberry Tart Pie – just to name a few) in the past… but I think this one may be one of my favorites.

I took a basic shortbread cookie and filled it with the most delicious raspberry jam and then topped it with a simple lemon drizzle.  Simple but so yum!  The day I made these, I also took the same shortbread cookies and filled them with a creamy lemon filling.  Those were super yum too!  But I think these were my favorite.
