The recipe I was given to recreate is Dorie Greenspan’s Swedish Visiting Cake Bars.

Dorie shared her thoughts on particiapting in Cookies for Kid’s Cancer saying,

I have been a supporter of Cookies For Kids Cancer from before Day 1 and with good reason: It’s a targeted source of funding for research into pediatric cancer treatments. That pediatric cancer is so prevalent and so poorly funded is a terrible paradox. Cookies for Kids Cancer is changing this and I love helping them reach their goals.

These are a mash-up of two recipes I love: almond-meringue topping, which I usually use on fruit tarts and (a variation of the) Swedish Visiting Cake, which is usually unadorned. I can no longer remember when or why I married these two, but once I did, the knot was tied for life — the crisp almonds and chewy cake make a perfect couple.

The cake is supremely satisfying and the topping is unusual in that it bakes to a meringue finish, but there’s no whipping involved. You just mix egg whites and confectioners’ sugar together — I do it with my fingers — swish sliced almonds around in the mix and spread it over the batter. The oven does all the work.

They are buttery, soft and so good.  I mean it.  Seriously.  I know I say I love all the things I make on my blog… but these Cinnamon Spritz Cookies are something special.

Cinnamon Spritz Cookies

Cinnamon Spritz Cookies

Yield: 5 dozen
Prep Time: 10 minutes
Cook Time: 6 minutes
Total Time: 16 minutes

Ingredients

Ingredients

  • 1 cup unsalted butter, room temperature
  • 2/3 cup sugar
  • 3 egg yolks
  • 1 Tbsp cinnamon extract
  • 1 Tbsp ground cinnamon
  • 2 1/2 cups all-purpose flour

OXO Supplies

  • OXO Non-stick Pro Cookie Sheet
  • OXO Cookie Press with Disk Storage Case
  • OXO Cookie Press Autumn Disk Set
  • OXO Silicone Cookie Spatula

Instructions

  1. Preheat oven to 400 F degrees. Line the OSO Cookie Sheet with parchment paper.
  2. In the bowl of your stand mixer, cream together the butter and sugar for about 3 minutes.
  3. Add the eggs, one at a time and mix until smooth. Scrape the sides and bottom of the bowl to ensure all the egg has been incorporated.
  4. Pour in the cinnamon extract and mix to combine.
  5. In another bowl, sift together the flour and ground cinnamon.
  6. In three parts, add the flour and mix until just combined. Scrape the bowl.
  7. Divide evenly into 4 parts.
  8. Add gel food coloring and mix until combined.
  9. Fit the OXO Cookie Press with an Autumn themed disk. Force the dough through the cookie press onto the prepared cookie sheet.
  10. Bake for 5-7 minutes. DO NOT OVERBAKE!!
  11. Use the OXO Cookie Spatula to remove the cookies to a wire rack to cool completely before enjoying!

For this Key Lime Pie, I used eggs I gathered at Good for You Farm.  GFY Farm is a veteran owned small farm in Virginia owned by my friends Marc & Sarah.  Marc is a Marine Corps wounded veteran who thrives every day he gets to build and work on his farm.

Sarah turned me on to farm fresh eggs so I knew I had to use them in a Key Lime Pie!

This pie is really simple to make.  There are only a few ingredients and takes no skill at all to make.  The filling is tart and creamy and paired with the rich buttery crust and smooth, light whipped cream… you can’t go wrong!

If you don’t have access to fresh eggs from a local farm, no worries… you can still make this pie!  Try buying the organic eggs at your local store or maybe look around your area for a farm that sells them.  They really do make a magical difference in this recipe!

Key Lime Pie

Key Lime Pie

Yield: 8 servings
Cook Time: 25 minutes
Total Time: 25 minutes

Ingredients

Base

  • 200 grams (7.1 ounces) graham crackers or vanilla wafers,
  • 100 grams (3.5 ounces) unsalted butter, melted
  • OXO 20-centimeter (8-inch) pie plate

Filling

  • 4 egg yolks
  • 400 grams (14.1 ounces) condensed milk (or one 397-gram (14-ounce) can)
  • Zest and juice of 8 key limes

Topping

  • 400 milliliters (13.5 ounces) whipped cream
  • 10 grams (1 teaspoon) granulated sugar
  • Lime zest, for sprinkling

Instructions

Base

  1. Place the crackers in a food processor and pulse until crushed but not too fine. Tip into a bowl, add the melted butter, and stir to combine.
  2. Press the mixture into the base of a 20-centimeter (8-inch) pie tin, pushing it up the sides of the tin to create a crust. Place in the fridge to set.
  3. Preheat the oven to 150 degrees centigrade/gas mark 2 (300 degrees F).

Filling

  1. Whisk the egg yolks with the condensed milk in a bowl. Add the lime juice and zest and whisk again. Pour into the prepared base.
  2. Bake until just set, 25 to 30 minutes. The filing will have risen and may have started to color around the edges.
  3. Remove from the oven and leave to cool at room temperature, then chill in the fridge for at least 2 hours before serving.

Topping

  1. With the whisk attachment on your stand mixer, beat on high the whipped cream and sugar until medium to firm peaks form.
  2. Cut the pie into wedges and serve with whipped cream and a sprinkling of lime zest

For me, summer isn’t complete without ice cream.  Lots and lots of ice cream!  However, since I’m kinda obsessed with cupcakes I figured why not combine the two and make Ice Cream Cone Cupcakes!

I’ve had a cupcake cone baking rack sitting in my closet for a couple years now and just never got around to using it.

#SummerDessertWeek was the perfect reason to combine my love ice cream and cupcakes and use the rack!

My Ice Cream Cone Cupcakes are super simple to make because I combine store ready and homemade.

To me, just because I use a box mix doesn’t make my dessert any less amazing or homemade!  I just think of it as a time and sanity saving measure!

Ice Cream Cone Cupcakes

Yield: 12 cupcakes

Ingredients

Ice Cream Cone Cupcakes

  • 1 box funfetti cake mix + ingredients to make it listed on on the box
  • 24 ice cream cones

Buttercream

  • cupcake cone baking rack
  • 1/2 cup unsalted butter, room temperature
  • 1lb powdered sugar
  • 1/2 cup heavy whipping cream
  • 1 Tbsp vanilla extract
  • gel food coloring in pink, teal, and purple
  • Sweet Treats sprinkles
  • Wilton 1M piping tip & disposable piping bags

Instructions

  1. Preheat oven then make the cake batter according to directions on the box.
  2. Place the cupcake cone baking rack on a baking sheet and insert the cones. Fill each cone half way with batter. Bake according to cupcake instructions on the box.
  3. Once out of the oven, cool completely before frosting.
  4. In the bowl of your stand mixer, cream the butter until smooth.
  5. Add the powdered sugar and vanilla extract plus 1/4 cup of heavy cream. Beat until smooth making sure to scrape the bowl.
  6. Add enough of the remaining heavy cream until you reach your desired consistency of buttercream.
  7. Separate buttercream into 4 bowls. Using the gel coloring, color 3 of the bowls leaving 1 white.
  8. Fill the piping bag with frosting fitted with a 1M piping tip. For a swirl color, add two colors to the bag.
  9. Pipe swirls of frosting on top of each cupcake cone.
  10. Decorate with Sweet Treats sprinkles!
  11. Enjoy!

One breakfast my family is known for making on road trips is breakfast sandwiches.  My husband typically cooks them while the girls are getting ready and has them wrapped up and ready as we hit the road.  However, road trips aren’t the only time that we want breakfast sandwiches.

My teenage daughter hates making breakfast in the morning.  Unless I’ve got something quick for her to eat in the morning, she’d rather go without.  When OXO asked if I wanted to try out some of their products to make breakfast easier, I jumped on the chance to recreate our favorite breakfast sandwich for her!

First up is the egg for the sandwich.   We love eggs and salsa in our family, so I whipped up 2 eggs, salt, pepper, milk and salsa together in the OXO Microwave Egg Cooker.  The Cooker has a wide opening for whisking scrambled eggs in the bowl and a removable base to easily transfer your eggs to the muffin.  Super easy to use!

As the eggs are in the microwave cooking, I prep the bacon.  I cut a few thick slices in half, season them with pepper, and lay them on the OXO Microwave Bacon Crisper.  The adjustable kickstand allows grease to drain into the built-in reservoir for healthier, crispier bacon in minutes.

As soon as the eggs have finished cooking, I pop a slice of cheese on top, close the Cooker lid and put the bacon in the microwave to cook.

While the bacon is cooking, I get the hot tea ready.  I fill the OXO Adjustable Temperature Kettle with hot water and set it to 200F degrees and scoop some black tea into the OXO Twisting Tea Ball.

The Kettle is cordless when removed from the base, with a silicone surface so you can bring it to the table without worrying about damaging surfaces.  The Twisting Tea Ball makes it easy to scoop up the desired amount of loose leaf tea, and the twisting feature ensures the leaves stay in the ball.

And in 5 minutes, I’ve got a delicious breakfast sandwich and a hot cup of tea ready for my daughter to enjoy before school.

5 Minute Breakfast Sandwich

5 Minute Breakfast Sandwich

Ingredients

Breakfast Sandwich1 English muffin

  • 2 eggs
  • 1 slice of cheese
  • 2 Tbsp salsa
  • 1 Tbsp milk
  • salt/pepper
  • 2 slices thick cut bacon

Tea

  • loose leaf tea
  • water

Supples

  • OXO Microwave Bacon Crisper
  • OXO Microwave Egg Cooker
  • OXO Clarity Adjustable Temperature Kettle
  • OXO Twisting Tea Ball

Instructions

Breakfast Sandwich

  1. Remove cheese, eggs, and milk from the fridge.
  2. Fill OXO Clarity Adjustable Temperature Kettle with water and set to desired temperature to turn on.
  3. Split English muffin in half and start toasting it in your toaster.
  4. Lay 2 pieces of bacon onto the OXO Microwave Bacon Crisper and generously pepper both sides. Set crisper aside.
  5. Crack 2 eggs into the OXO Microwave Egg Cooker and add the milk, 1 Tbsp salsa and salt/pepper to taste. Mix together with a fork until combined. Cook in microwave according to directions on the OXO packaging. Once the egg is fully cooked, remove the cooker from the microwave and place a piece of cheese on top of the egg. Put the lid down so that the heat stays inside and the cheese melts.
  6. Cook the bacon on the crisper in the microwave according to the directions on the OXO packaging. Carefully remove the crisper from the microwave once the bacon has reached your desired crispness.

Assembly

  1. Open the English muffin onto your plate and place the egg/cheese on one half. Layer the bacon on and finish off with another Tbsp of salsa. Put the second half of the muffin on top.

Tea

  1. Once the hot water has reached the desired temperature, use the OXO Twisting Tea Ball to scoop the loose leaf tea.
  2. Pour the hot water into a mug and place the tea ball in the hot water. Wait a few minutes and remove the ball from the hot water.

Serve

  1. Serve your 5 Minute Breakfast Sandwich with a side of fruit and hot tea for a complete, simple, delicious breakfast!

I was provided with product from OXO, however the recipe and thoughts are all my own. 

With Summer quickly approaching, berries are becoming less expensive at the grocery store enticing me to buy them! When OXO offered me a 14 Piece Glass Bake, Serve & Store Set, I knew I had to use the Glass Bakeware pie plate to make a Four Berry Pie!

So let me tell you about this pie.  It’s TO DIE FOR.

Typically, I don’t eat more than one of whatever it is I bake.  Since I bake so often, I don’t always need to eat an entire cake or a dozen cupcakes… just one is fine.

But this Four Berry Pie was different.  After I served a slice of it to my family, I hoarded the rest for myself!  Yeah.  It was THAT good!

I’m not kidding either.  I ate half a pie all by myself!

Not in one sitting though.  Over the course of 4 days I ate half a pie.  Breakfast.  Lunch. Snack, Dessert.  It didn’t matter what time of the day it was, I was going to enjoy this pie!

Four Berry Pie Recipe Type : Dessert Cuisine: American Author: JavaCupcake Prep time: 60 mins Cook time: 55 mins Total time: 1 hour 55 mins Serves: 1 pie

Ingredients

  • Crust
  • 1 cup unsalted butter, diced and chilled
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 3-5 tablespoons ice water
  • 1 egg + 1 Tbsp milk, whisked
  • 1/2 cup Sugar in the Raw
  • OXO 9" glass pie plate
  • Filling
  • 6-7 cups of mixed berries (I used strawberries, blueberries, raspberries, and blackberries)
  • 1 lemon, zested and juiced
  • 1/4 cup sugar
  • 1/2 cup all-purpose flour
  • 2 tsp ground cinnamon
  • 1/8 tsp salt

Instructions

  1. Crust
  2. Preheat oven to 400F and place rack in the center.
  3. Cut the butter into cubes and freeze for 20 minutes.
  4. Fill a 1 cup measuring cup with ice water and chill for 20 minutes.
  5. Once the butter and water are ice cold, get out your food processor. Pulse together the flour and salt in the food processor.
  6. Add the cold butter cube and process together until it resembles a course meal and no large chunks of butter remain.
  7. Spoon 3 Tbsp of water into the dough and mix until combined. Add 1-2 Tbsp more if the dough is too dry. Mix after each additional Tbsp. The dough will not come together as a complete ball, but you should be able to tell if it is crumbly or wet.
  8. Turn the dough out onto a floured surface and press into a ball. Divide the dough into two parts.
  9. Roll each piece of dough into a circle at about 12" wide (for a 9in" pie).
  10. Gently transfer one crust onto the OXO 9" glass pie plate and press into the sides.
  11. Filling
  12. In a large bowl, combine the 6-7 cups of mixed berries with the zest of of a lemon and the juice of half of the lemon.
  13. Sprinkle the flour, cinnamon, and salt over the fruit and toss to coat.
  14. Pour the filling into the crust.
  15. Crust
  16. Cut a few of your favorite shapes out of the second crust and set aside the cut-outs.
  17. Carefully place the crust over the berries, completely covering the entire pie plate.
  18. Trim the excess crust off the sides then crimp the edges together.
  19. Place the cut-out crust pieces on top.
  20. Brush the egg/milk mixture over the top of the crust making sure not to leave any puddles of egg.
  21. Sprinkle generously the entire crust of the pie with Sugar in the Raw.
  22. Chill the pie in the freezer for 20 minutes before baking.
  23. Bake
  24. Place the pie on a baking sheet and bake for 50-60 minutes. You'll know the pie is done with the filling is bubbling and the crust is a rich golden brown.
  25. NOTE: If the edges start to get too dark before the center, cover the edges with foil to prevent burning.
  26. Allow the pie to cool to room temperature to allow the filling to set before cutting.
  27. Serve with a scoop of vanilla ice cream!
