What kid doesn’t love ice cream?  I mean… what adult doesn’t love ice cream?  So when Blue Bunny® reached out and asked me to throw a Back to School Ice Cream Social and said absolutely!

I didn’t want to spend a fortune on this party, so I kept my expenses under $40 and created a super fun afternoon of games and ice cream for the kids!

Ice Cream Cone Bunting

Walmart has black triangle-shaped bunting in their party section which made creating this ice cream cone bunting really simple.

  1. Using the chalk that came with the bunting, draw lines across the triangles to make the lines of the ice cream cone.
  2. Cut out ice cream scoop shapes using primary color construction paper.
  3. Glue them with a glue stick to the top of the bunting triangles!

I also had some tissue paper tassels from past parties, so I strung a few together to finish off the bottom of the dessert table.

Pencil Boxes

I used two pencil boxes to hold some of the party items I had for the ice cream social.

These boxes are really inexpensive at Walmart ($0.49 each) and were the perfect size to hold the sprinkles and the ice cream snacks.

Cake Stands

To add height to the ice cream display table, I used cake stands.    Cake stands are a great way to bring visual appeal to the table, add height and highlight something special on your tablescape.

Make Your Own Ice Cream Cone

Supplies:

  • Construction paper
  • Scissors
  • Crayons/markers
  • Paper straws (optional)
  • Glue sticks

Technique:

  1. Cut out triangles to create the cone shape
  2. Cut out circles in various colors/sizes
  3. Glue the circles onto the cone to create you ice cream cone.  Add as many scoops as you like!

  4. Using the crayons/markers add sprinkles, cherries, or anything else you want to your ice cream.

For me, summer isn’t complete without ice cream.  Lots and lots of ice cream!  However, since I’m kinda obsessed with cupcakes I figured why not combine the two and make Ice Cream Cone Cupcakes!

I’ve had a cupcake cone baking rack sitting in my closet for a couple years now and just never got around to using it.

#SummerDessertWeek was the perfect reason to combine my love ice cream and cupcakes and use the rack!

My Ice Cream Cone Cupcakes are super simple to make because I combine store ready and homemade.

To me, just because I use a box mix doesn’t make my dessert any less amazing or homemade!  I just think of it as a time and sanity saving measure!

At first, my kids didn’t think these were actually make of cake and frosting, they thought they were real ice cream cones!

It wasn’t until I turned the cones sideways and showed them they didn’t fall apart that they believed me!

Ice Cream Cone Cupcakes

Yield: 12 cupcakes

Ingredients

Ice Cream Cone Cupcakes

  • 1 box funfetti cake mix + ingredients to make it listed on on the box
  • 24 ice cream cones

Buttercream

  • cupcake cone baking rack
  • 1/2 cup unsalted butter, room temperature
  • 1lb powdered sugar
  • 1/2 cup heavy whipping cream
  • 1 Tbsp vanilla extract
  • gel food coloring in pink, teal, and purple
  • Sweet Treats sprinkles
  • Wilton 1M piping tip & disposable piping bags

Instructions

  1. Preheat oven then make the cake batter according to directions on the box.
  2. Place the cupcake cone baking rack on a baking sheet and insert the cones. Fill each cone half way with batter. Bake according to cupcake instructions on the box.
  3. Once out of the oven, cool completely before frosting.
  4. In the bowl of your stand mixer, cream the butter until smooth.
  5. Add the powdered sugar and vanilla extract plus 1/4 cup of heavy cream. Beat until smooth making sure to scrape the bowl.
  6. Add enough of the remaining heavy cream until you reach your desired consistency of buttercream.
  7. Separate buttercream into 4 bowls. Using the gel coloring, color 3 of the bowls leaving 1 white.
  8. Fill the piping bag with frosting fitted with a 1M piping tip. For a swirl color, add two colors to the bag.
  9. Pipe swirls of frosting on top of each cupcake cone.
  10. Decorate with Sweet Treats sprinkles!
  11. Enjoy!

For a few summers now, I’ve wanted to make another ice cream cookie sandwich.   When I had the opportunity to work with Blue Bunny®, I jumped at the chance and created these Peanut Butter Ice Cream Sandwiches!

Putting together these Peanut Butter Ice Cream Sandwiches took no time at all!  I used one of my tried and true peanut butter cookie recipes to make the cookies.

These cookies are firm and firm, yet still soft enough to taste a bit of chew when you bite into them.  They hold up really well with the Blue Bunny® ice cream.

After the ice cream sandwiches were all assembled, I popped them back in the freezer to set.  The great thing about this type of dessert is that you can make it ahead and pull it out of the freezer when you need it!

Peanut Butter Ice Cream Sandwiches

Peanut Butter Ice Cream Sandwiches

Yield: 12
Prep Time: 2 hours
Cook Time: 9 minutes
Total Time: 2 hours 9 minutes

Ingredients

  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup shortening
  • 1 cup crunchy peanut butter
  • 1 cup sugar
  • 1 cup light brown sugar, packed
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • Blue Bunny® PB 'N Cone™ ice cream
  • sprinkles (optional)
  • kitchen scale

Instructions

  1. Preheat oven to 375 F degrees. Line baking sheet with parchment paper.
  2. In the bowl of a stand mixer, cream together the butter, shortening, and peanut butter until combined. Scrape the sides of the bowl and mix again.
  3. Add the sugars and mix on medium speed until completely incorporated. No need to whip or cream, just combine. Scrape the sides of the bowl and mix again.
  4. One at a time, add the eggs and mix until combined. Mix in the vanilla.
  5. Add the flour, baking powder, baking soda, and salt and mix on low speed. Scrape the sides and mix on medium speed until completely incorporated.
  6. Using the kitchen scale, weigh 50g balls of dough. Roll the dough in the palm of your hand until smooth the gently press to make a disc. Place the dough on the prepared baking sheet.
  7. Using a fork dipped in flour to prevent sticking, gently press the fork in a criss-cross pattern on the top of each disc of dough.
  8. Bake for 9 minutes. DO NOT OVER BAKE! Allow cookies to cool for a few minutes on the pan before removing to a wire rack to cool completely.

Assembly

  1. Set the ice cream out for 5 minutes before assembling to soften.
  2. Scoop a generous amount of ice cream onto the flat bottom of one cookie.
  3. Using the rounded back of the ice cream scoop, gently press the ice cream down onto the cookie.
  4. Place a second cookie flat/bottom side down onto the ice cream.
  5. Using a flat hand, press down until the ice cream just reaches the edges.
  6. Optionally, roll the sides of the ice cream sandwich in sprinkles to decorate.
  7. Freeze for 1 hour or until ready to serve.

2. Go to the Park

3. Play Cards

When I was a kid, my dad and I used to stay up late and play cards. When Grandpa comes to visit, he loves playing cards with my kids now. Whether it’s Go Fish, Memory or Rummy, playing cards is fun for all ages! Even better, in between turns you can eat Nestlé® Drumstick® S’mores!

4. Go to the Library

5. Go for a Walk

One of my Dads favorite things to do is go for walks. He goes down to the local waterfront, to parks, and even around his neighborhood for a daily stroll. Bringing his grandkids along with him is always fun! And sometimes they watch youtube videos on the way. Not only do they get exercise, but they get a chance to talk and spend quality time together while enjoying the outdoors. A walk would be fun too with Nestlé® Drumstick® S’mores!

If you’ve been following JavaCucpake for the last four years you’ll know that I’m a huge fan of my local gelato store Pinguino Eis in Grafenwoehr, Germany.  Last September, Phillip (the owner) and Luca allowed me into their store to view the process of making the gelato.  It was so fascinating to see the process first hand how they make the most delicious ice cream I’ve ever had.

Recently, Pinguino Eis began offering ice cream cakes or Eiskuchen in addition to all the other deliciousness they serve at their cafe.   This happened to be perfect timing because my husband Dave requested and ice cream cake for his birthday!

We chatted with Ariana (co-owner) about the flavors we wanted and she wrote down all the details.  Dave had a vision of her perfect ice cream cake and we knew that vision could be fulfilled by our friends at Pinguino!

Can can think of anything more delicious than this?  Not only is all their gelato fresh made daily, but the entire cake was made by hand from scratch!  This is why I love living in Germany so much.  Everything is made by hand with love.  It’s just the only way they know how to do things here.
