Life has been so super duper chaotic lately.  If you’ve been following me on Instagram or Facebook you’ll see that I have been super quiet there.  These adorable lamb cookies make me happy and I really hope you love them too.

In early April, I was in a massive (for me) car accident where I was rear ended on the highway.  I had to bring my car to a quick stop because the cars in front of me were stopping.  The car behind me was still going full speed and plowed into the back of me.  The car behind that guy didn’t slow down or stop either so I got hit a second time.

The two impacts caused my body to be thrown back and forth in my seat and my head to hit the headrest repeatedly.  An ambulance came and took me to the local emergency room.

The doctors there ruled out a spinal cord injury but they did conclude I had a concussion.

Also,  my car was totaled… but that’s a story for another day.

For the weeks following the accident, I suffered through some of the hardest days of my life personally.  I’ve been able to handle a lot when it comes to my husband, kids and family… however when it came to dealing with my head injury, it was a lot harder to deal with.

Thus my blog, my work, my life needed to be put on pause then reset.

Fast forward a few more weeks and here I am.  Not back to 100%, I probably never will be, but back to a point where I can type, write, and begin to think about the future.

This recipe is not an original, but it is one that I think you’ll like.  You’ll be seeing more of these kinds of posts for the foreseeable future because I just need the time to heal.

Ingredients

  • 6 oz. white fondant
  • Black gel food coloring
  • ½ cup cornstarch, for rolling
  • 12 Oreo cookies
  • 2 cups white candy melts
  • 2 tsp coconut oil
  • 1 cup sweetened shredded coconut
  • 24 candy eyes
  • 12 Sprinkles (Circle-shaped – they will act as the lamb’s nose)

Instructions

  1. Line a baking sheet with wax paper.
  2. Begin by preparing your fondant shapes: add 3-4 drops of black gel food coloring to your fondant and fold and knead until completely colored. On a surface lightly dusted with cornstarch, roll out your fondant to be about ¼ of an inch thick and cut 12 small circles. These will be your lambs’ head.
  3. Shape smaller pieces of your dark grey fondant into tiny oval shapes. Make 24 of them: these will act as your lamb’s ears.
  4. Microwave your white candy in 30-second intervals until completely melted. With a fork, dip each Oreo into the candy and set on your lined baking sheet.
  5. Place one circle-shaped fondant in the center of each Oreo cookie. Sprinkle your shredded coconut on each one.
  6. Using a toothpick, apply a bit of white candy melts on the back of each fondant ear. Gently place on each Oreo cookie.
  7. Apply the candy melts on your candy eyes and your sprinkles. Apply on face of each lamb.
  8. Allow to set for at least 30-45 minutes.

Last year in my Glam Easter Brunch & Tablescape, I used upcycled jam jars filled with candies and topped with a porcelain bunny as a part of the decor.  This year, since I’m still in love with the filled-jar concept, I wanted to do something a littler different.

I created a set of Spring Painted Candy Jars filled with pastel jelly beans which became the centerpiece of my entire home decor for the season.

They are absolutely adorable and I actually ended up going to Home Goods after I made them to buy a coordinating table runner (the bunny one in the pictures) and placemats for my dining table! I’m obsessed with the mint and yellow pastels this season!

To make these jars, you’ll need only a few things…

  • Pint mason jars with lids, clean & dry
  • Chalk paint (water-based)*
  • Paint brush
  • Paper plate or paint tray
  • Q-tips or small cloth rag
  • Vinyl stickers (template here & here)
  • Lace or ribbon
  • Scissors
  • Hot glue gun & glue
  • Spring candy
  • Porcelain bunny

*I chose the chalk paint because I love the look of it when it’s dry.  You can use any water-based paint you want for these jars.

Instructions

  1. Using these templates (tall bunny & short bunny), cut out the bunnies using a vinyl sticker cutting machine to the size of your jars.

  3. Paint the outside of the jar.  Do not worry about painting the bottom, you won’t see it when it’s finished.  Wait a few minutes before adding a second coat of paint.  Repeat with a 3rd coat if necessary.  Spring Painted Candy Jars | The JavaCupcake Blog https://javacupcake.com
  4. While the paint is still a bit sticky and before it is completely dry, gently peel off the vinyl stickers.  Do not wait until the paint is completely dry because it may chip when you pull the vinyl away.
  5. Using a slightly wet q-tip or a damp towel, clean up any edges where the paint may have seeped under the vinyl.

  7. Paint the jar lids also with at least 2 coats.  Allow the paint to dry completely on all parts before assembling.
  8. Fill the jars with candy and screw on the lids.
  9. Cut a piece of lace or ribbon to fit the size of the lid of the jar.  Place it around the lid and apply a small dollop of hot glue onto the jar and press the ribbon into place.  Hold for a few seconds to secure.
  10. Optionally, hot glue a porcelain bunny to the top of the jars.

I am not a painter by any means, so I did this project with zero skill or knowledge of what I was doing.  Which means ANYONE can do this! I learned a few things along the way that hopefully will make it easier for you if you try it.

Helpful Tips

  • You don’t have to make your jars look exactly like mine.  Let my jars be an inspiration to you!  Pick colors you love, candy you love, and ribbon you love! Make it your own!
  • If you don’t have access to a cutting machine, try having them custom made from a vendor on ETSY.  My neighbor, Robby of Drapela Designs, made mine for me for very inexpensive.  You can find him on ETSY here and Facebook here if you’d like him to make them for you too!
  • Size the bunnies before cutting them.  Measure your jar and decide what width and height will work best for your jars.

  • Do not lift up the vinyl sticker once you have placed it.  Make sure you know exactly where you want it before you press it down.  Lifting it up will cause the edges to get dirty and dusty and will allow the paint to seep under the sticker.  Also, try to keep the sticker on the flattest part of the jar.  If you a place it too high or too low it will not lay flat where the jar curves.
  • Like I said above, do not let the paint dry all the way before removing the vinyl stickers.  This step is very important!  I made the mistake of doing that and I had a lot of touch-up work to do.  You want the paint still tacky and wet so that it does not crack when you remove the stickers.  A toothpick or tweezers can be helpful when trying to remove the vinyl.

  • Take your time!  When I get really excited about a project, I often try to rush things.  Don’t do that here.  Take your time, enjoy the process and make sure you do good work the first time!

Being a busy Mom coming up with cute, delicious desserts for Easter can sometimes be a daunting task.  These semi-homemade Bunny Cupcakes are not only adorable, but they are sure to make everyone jump for joy on Easter!

I have realized that sometimes, it’s okay if everything I bake isn’t 100% homemade.  It doesn’t make me less of a baker, less of a mother and it surely doesn’t mean what I bake isn’t going to taste delicious! So for Easter this year, I decided to focus on making my cupcakes super cute by turning them into bunnies!

Here are a few of the things you’ll need for these cupcakes.  You don’t have to use exactly these items or these brands… just use what you have access to at the stores near you!

You’ll need:

  • Cake mix & all the ingredients to make the cake
  • Marshmallows
  • Black sugar pearls, spring colored jimmies, and pink sugar crystals
  • Small pink jelly beans
  • Sweets & Treats Boutique pink dot Bake Bright cupcake liners
  • Scissors
  • Frosting (not pictured)

After the cupcakes are baked and before you begin frosting the cupcakes, you’ll need to prepare the marshmallow ears for the bunnies.

  1. Hold the marshmallow by the flat edges.
  2. Using clean scissors, cut across the marshmallow from one corner to the opposite corner.
  3. Press the exposed side of the marshmallow into a bowl of pink sugar crystals.
  4. Set the two halves aside in pairs so they can be easily placed onto the cupcakes later.

Putting together the Bunny Cupcakes is super simple! Pipe a dollop of frosting to the top of each cupcake, use the tweezers to place each black sugar pearl eye and press in a pink jelly bean for a nose! Easy peasy!

You don’t have to do accent cupcakes, but I couldn’t resist buying these spring colored jimmies at the store when I saw them.   I only did 4 of the cupcakes covered in these jimmies, but it really adds a fun pop of color to the cupcakes!

I have been obsessively buying cake stands since moving back to the USA.   Home Goods, Michaels and Target have both had some inexpensive and super cute stands that I had to have!  The pastel colors coordinate perfectly with the Bunny Cupcakes.

A bouquet of fresh cut daffodils, a few porcelain bunnies, and a few decorative eggs from Germany completely the display.  The best part about putting together a display like this is that you don’t have to do it exactly like mine. Use what you have in your home, put out the decorations you love and make it beautiful!  No need to go out and buy anything new!

I shared these cupcakes with my new neighbors.  They have 3 girls and she reported back to me that they were a huge hit! That’s always the best feeling when you make something and your friends and family get true joy from them!

Prep Time: 1 hour
Cook Time: 18 minutes
Total Time: 1 hour 18 minutes

Ingredients

Cupcakes

  • Sweets & Treats Boutique Pink Dot Bake Bright Liners
  • 1 box of Pillsbury Spring Funfetti Cake Mix
  • 3 eggs
  • 1/2 cup vegetable oil
  • 1 cup water

Frosting

  • 3/4 cup unsalted butter, room temperature
  • 1 1/2lb powdered sugar
  • 1/3 cup heavy cream
  • 2 tsp vanilla
  • pinch of salt

Decorations

  • 24 large marshmallows
  • pink sugar crystals
  • black sugar pearls
  • small pink jelly beans
  • Spring colors jimmies

Other Supplies

  • large round piping tip
  • large piping bag
  • scissors
  • tweezers

Instructions

Cupcakes

  1. Prepare the cupcake batter according to the directions on the box.
  2. Line cupcake pan with Sweets & Treats Boutique Bake Bright liners.
  3. Fill the liners 1/2 full and bake according to box directions.
  4. Allow to cool completely on a wire rack before decorating.

Frosting

  1. Beat together the butter and powdered sugar in the bowl of a stand mixer until smooth.
  2. Add the vanilla, salt and half the cream and mix until combined.
  3. Pour the remaining cream in and beat on high for 4 minutes.

Decorations

  1. Pour the sugar crystals into a bowl.
  2. Cut each marshmallow in half from corner to corner. Press the exposed area into the sugar crystals. These marshmallows will be the bunny ears. Set the ears aside in pairs so when you put them on the cupcakes, the ears match.

Assembly

  1. Fill the piping bag fitted with the large round tip with frosting.
  2. Squeeze a dollop of frosting multiReplace" id="1133" data-gr-id="1133">onto the top of each cupcake.
  3. Press a pair of ears onto the frosting.
  4. Using the tweezers, place two black sugar pearls on the "face" for eyes. Press a pink jelly bean almost all the way in under the eyes for a nose.
  5. For accent cupcakes, squeeze a dollop of frosting onto the top of a cupcake. Completely cover the top of each cupcake with Spring colors jimmies.
