Meet Veronika.  She was my photographer in Germany for the last year I was there and from the first moment we met, I knew she was a kindred spirit.  Veronika is creative, passionate about her craft and incredibly talented.

Since she was little, Veronika never had a birthday turn out the way she wanted. In fact, she often times never even had a birthday party. Veronika dreamed of a girly, yet elegant party filled with pink and gold.

This year, Veronika decided unless she did it for herself, exactly how she dreamed, it would never happen.   In doing so, she made this gorgeous Pink and Gold Soiree come to life!

Pink and gold are her go-to colors for everything she does.  Veronika loves the elegance of the colors, their mixture of almost French bourgeoisie with her traveling lifestyle in Europe perfectly represent her spirit and soul.

Veronika made the tassel banner with what supplies she had already at home including gold paper from Christmas gifts, pink wrapping paper, and cardboard from random boxes.

The pom poms were a splurge purchase from Martha Stewart Crafts that she had been eyeing at the store, dreaming of a way to use them. They worked perfectly with this pink and gold soiree!

The gold chargers are from NanaNanu, a home store in Germany, and work perfectly to display the goodies Veronika served at the party.  (I have included a links below to where you can purchase products similar on Amazon.)  The Ferrero Roche hazelnut chocolates wrapped in girly gold foil are Veronika’s favorite and looked perfect on the gold chargers.

Would it be a party without cupcakes?  I think not!  Veronika hired local cupcake baker (Frosted Fantasies) to create the perfect cupcake in pink, matching the theme of the party deliciously!

The perfect pink and gold soiree must include champagne so Veronika chose 5 bottles in various flavors. One for each of her guests in the flavors they loved.

Austria is famous for it’s Mozart Chocolate Cream.  The bottles are wrapped in gold making them the perfect addition to the bar at this party.

Before Veronika even started getting things ready for the party, she talked with local balloon artist DeAna of Balloon Beauty Decor & Design and began dreaming up ideas for balloons!

The cupcakes I created for this party were Cherry Red Velvet Cupcakes!  Yum!  Rich red velvet cake filled with cherry pie filling and topped with a coconut cream cheese frosting.  The red cake and white frosting paired with the blue and white wrappers from Bella Cupcake Couture make the perfect patriotic treat!

Since these will be served at a backyard BBQ, I wanted to keep the setup super simple.  I displayed the cupcakes on a glass plate and used a two tier stand to set the plates on. I wanted the backdrop of the cupcakes to be the green grass, the yard, the blue sky and the party.  Very informal, but still super pretty.

Cherry Red Velvet Cupcakes

Yield: 2 dozen cookies
Prep Time: 15 minutes
Cook Time: 18 minutes
Total Time: 33 minutes

Ingredients

Cherry Red Velvet Cupcakes

  • 1/2 cup unsalted butter, room temperature
  • 1 1/2 cups sugar
  • 2 eggs
  • 1/4 cup cocoa powder
  • 6 Tbsp red liquid food coloring (about one small bottle)
  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • 2 1/2 cup flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 3 tsp white vinegar
  • 2 12oz cans Lucky Leaf Cherry Pie Filling

Coconut Cream Cheese Frosting

  • 1 8oz package of cream cheese, room temperature
  • 1/2 cup unsalted butter, room temperature
  • 4 cups powdered sugar
  • upto 1/4 cup coconut milk
  • 2 tsp coconut extract
  • fresh cherries, for garnish
  • red & blue sugar crystals, for garnish
  • Bella Cupcake Couture cupcake wrappers

Instructions

Cherry Red Velvet Cupcakes

  1. Preheat oven to 350 F degrees. Line cupcake pans with liners.
  2. In the bowl of your stand mixer, cream together the butter and sugar for 3-4 minutes.
  3. Add the eggs, one at a time, and mix until incorporated after each egg.
  4. In a small bowl, combine the red food coloring, cocoa powder and vanilla extract until it turns into a paste.
  5. Add this paste to the butter and eggs and mix until combined.
  6. Add the flour and buttermilk, alternating. Begin and end with the flour. Mix only until just combined.
  7. Mix in the vinegar. Do not over mix the batter!
  8. Scoop batter 2/3 full into the prepared liners.
  9. Bake 17-19 minutes or until a toothpick comes out clean.
  10. Allow to cool in pans for about 5 minutes before removing to a wire rack to cool completely.

Coconut Cream Cheese Frosting

  1. In the bowl of your stand mixer, cream together the butter and cream cheese for about 2 minutes.
  2. Add the powdered sugar one cup at a time and mix until smooth after each addition.
  3. Mix in the coconut extract.
  4. One tablespoon at a time, add the coconut milk. Mix after each addition. You may or may not need all the milk. Add only enough until you reach your desired consistency. Once you reach that consistency, mix for 1 minute.
  5. Allow frosting to rest for a few minutes before frosting cupcakes.

Assembly

  1. Core out the center of each cupcake using an apple corer.
  2. Fill each cupcake with the cherry pie filling.
  3. Using the Wilton 1M closed star tip, frosting swirls of frosting onto each cupcake.
  4. Sprinkle the tops of the frosting with red & blue sugar crystals.
  5. Place a fresh cherry, stem included, on top.
  6. Before serving, place each cupcake in a Bella Cupcake Couture cupcake wrapper.

Notes

Do not overfill the cupcake liners with batter. These cupcakes puff up with big domes if you put less, rather than more, batter into each cup.

For the party, Carrie sent me her Jolene Pink Camoflague cupcake wrappers for this party.  For the party, Carrie sent me a package of her pink camo wrappers.  Kinda perfect for me since my hubby is in the Army and we’re stationed over here in Germany!  All Army – all the time! hehe I decided to make a strawberry cupcake with strawberry buttercream … both made with fresh strawberry puree.  It’s almost summertime so I thought this flavor would be a perfect choice… plus, the pink matches the wrappers!  Super easy, yet so super delicious!

For the display, I used things I already had at home… didn’t need to run to the store to buy anything.  Although, if I had to purchase any of the items I used, it wouldn’t be that expensive to recreate.

Here’s what I used to create the display:

  • Pink vinyl table cover
  • Pottery Barn white cake stand trimmed with 1 1/2 inch pink ribbon
  • Martha Stewart white rectangle platter trimmed with 1 1/2 inch pink ribbom
  • Pink tissue paper pom pom (watch this tutorial to learn how!) – hung from the wall
  • Pink curling ribbon – curled & hung from the wall
  • Cupcakes adorned with Bella Cupcake Couture Pink Camo cupcake wrappers
  • Army helmet, patrol cap and toy Stryker (You can go to any Military surplus store to look for similar items.  Also, any military toy truck would work!)

This display was super simple to put together and I think the addition of the ACU Army equipment really makes the pink POP!  And don’t worry if you don’t have access to an Army helmet or patrol hat – just use whatever your kids have already!  Got boys?  Use their Army trucks in the display!  Live near a military surplus store?  Run inside there and get some cheap ACU Army gear to put on your table.  No need to spend lots of money.

The pink curling ribbon I had in my stash of ribbon already and I think it added some texture and color to the back drop of the display.  The pom pom and the curls added much needed height to the entire display.

The cupcakes are a super yummy strawberry cupcake topped with strawberry buttercream and more fresh berries.  YUMMMMMMMMOOOO!  Seriously.  This is THE perfect strawberry cupcake.  Everyone who ate one RAVED about it.  This recipe makes 3 dozen cupcakes, so you could easily turn it into a cake with 3 8in layers or 2 9in layers.  Om nom nom nom

Fresh Strawberry Cupcakes with Strawberry Buttercream

Yield: 3 dozen cupcakes
Prep Time: 2 hours
Cook Time: 18 minutes
Total Time: 2 hours 18 minutes

Fresh strawberries macerated in honey and sugar are used in the cupcakes and frosting for these super sweet summer treat!

Ingredients

Strawberry Puree

  • 3 cups fresh strawberries, diced
  • 1/4 cup honey
  • 2-3 Tbsp sugar
  • 1 Tbsp vanilla extract
  • pinch of salt

Strawberry Cupcakes

  • 3 3/4 cups cake flour
  • 1 1/2 tsp baking soda
  • 3/4 salt
  • 1/2 cup buttermilk
  • 1/4 + 2 Tbsp cup vegetable oil
  • 1 tsp almond extract
  • seeds of 1 vanilla bean
  • 12 Tbsp unsalted butter, room temperature
  • 2 1/2 cups sugar
  • 3 eggs, beaten
  • 1 1/2 cups strawberry puree
  • pink food coloring (Wilton Gel - Pink) - optional

Strawberry Buttercream

  • 3 sticks (1 1/2 cups) unsalted butter, room temperature
  • 3 lbs powdered sugar, sifted
  • 1/2 cup strawberry puree
  • 1 tsp strawberry extract
  • 1/2 cup heavy cream
  • 1/8 tsp salt

Instructions

Strawberry puree

  1. In a medium bowl, drizzle up to 1/2 cup of honey over the top of the chopped strawberries. Add the sugar, vanilla and salt. Mix with a rubber spatula until the strawberries are completely coated.
  2. Let sit at room temperature for 1-2 hours. You want the sugars to get into the berries to create a delicious syrup.
  3. Puree in a food processor or blender until smooth.

Strawberry Cupcakes

  1. Preheat oven to 350 F degrees and line cupcake pans with liners.
  2. In a medium bowl, sift flour, salt and baking soda and set aside.
  3. In a measuring cup, measure out the buttermilk, oil and almond extract.
  4. In the bowl of your stand mixer, press the vanilla bean seeds into the sugar using the back of your spatula. This will release the oils in the seeds into the sugar.
  5. Add the butter and cream with the vanilla sugar for 1 minute with the mixer on high.
  6. Add the beaten eggs in three parts. Scrape the bowl and mix for 30 seconds after each addition.
  7. Add the buttermilk and oil mixture. Scrape the sides of the bowl and mix until completely incorporated.
  8. Fold in the flour using a rubber spatula until no more white can be seen. DO NOT OVER MIX.
  9. Add the strawberry puree and fold until combined.
  10. Add a few drops of food coloring to amp up the pink color - this is optional.
  11. Fill cupcake liners 1/2-2/3 full. Bake for 17-19 minutes.
  12. Remove from oven and allow to cool in the pans for 5 minutes before removing to a wire rack to cool completely before frosting.

Strawberry Buttercream

  1. In the bowl of your stand mixer, cream the butter.
  2. Add the sifted powdered sugar 1-2 cups at a time and beat on high until smooth after each addition. If the frosting gets too hard to mix, add a the extract and a few tablespoons of the strawberry puree.
  3. Once all the sugar has been added, add the extract (if you didn't already), salt and the strawberry puree and mix until combined.
  4. Add up to 1/2 cup heavy cream until you reach your desired consistency. This will vary on the humidity and temperature you're living in.
  5. Beat frosting on high for 2-3 minutes or until light and fluffy.

Assembly

  1. Using a Wilton 1M piping tip, pipe swirls of frosting onto each cupcake.
  2. Top with sprinkles and slices of fresh strawberries.
  3. Set each cupcake in a Pink Camo Cupcake Wrapper from Bella Cupcake Couture
